When Schlafly Beer began in 1991, Tom Schlafly looked to his heritage for visual inspiration. The “Ibex” (a wild goat) from the seal of the village of Steinhof where his great grandfather was born was combined with hops, barley, and the Schlafly name to create a new family crest and a unique brand logo. Since that time, the Schlafly logo has evolved, but the innovative and pioneering spirit of the brand remains the same.
The “Ibex Series” of beers from Schlafly are intended to harness the imaginative talents of our brewing team and create a space where unique ingredients, barrel-aging processes, and inspired styles can be showcased and appreciated. Designed to feature distinct limited releases every few months, this series hopes to honor the spirit in which Schlafly Beer was founded.
The first beer in the Ibex series is Lazy Ballerina, a French-style Saison brewed with locally grown Chambourcin grapes from Chandler Hill Vineyards and aged in Chambourcin barrels for 3 months.
On April 18th, we are celebrating the release of this beer and the launch of the IBEX brand with a cellar-tasting event unlike any other in Schlafly history. Along with Lazy Ballerina, we will be pouring: Oud Bruin, American Sour Ale with Persimmons, Wild Lazy Ballerina, Apricot Berliner Weisse, Blackberry Berliner Weisse, Blueberry Berliner Weisse, Berliner Weisse, and a few unnamed possibilities. If that isn’t enough, the great Beth Bombara will be filling the room with tunes from her new album and more.
Tickets go on sale on March 31st at 3pm via Brown Paper Tickets. This event is at the Schlafly Tap Room.
$12 ticket price includes 8 different Schlafly barrel-aged cellar tastings, a commemorative Ibex Series snifter (.4l) and the ability to purchase up to six (6) bottles of Lazy Ballerina.
If you were not able to get a ticket, bottles will be available for purchase after the event at 4pm only at The Tap Room and Bottleworks with max purchase of up to three (3) bottles. These bottles will not be available for purchase outside of our locations.
