Trinity Red Swingline Coming Today (New Belgium Co-Brew Coming Soon)

What a great start to 2013 for Trinity !! In January we saw an excellent write up with the gazette, we were approved by the state for our expansion, broke ground on our new 2000 sq ft oak barrel and wild beer room, and had the opportunity to brew a collaboration beer with Peter Bouckaert of New Belgium!

We are still in need of a bunch of hardback books for the archway leading into that new "Thinking beer," or "Unplugged Beer" barrel room ... and for those of you who are not aware, we have been trading 1 sample growler of house brewed beer for 1 case of hard back books! If you have books laying around please bring them in and exchange them for some FREE BEER!

Carrying the momentum into February our month is jam packed !! Friday February first, the long anticipated Red Swingline will release in bottles for the first time. This Third installment in our Office Space themed 'Case of the Mondays Series,' uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta from Crooked Stave Brewing). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (ruby red grapefruit), from the choice to use mosaic hops, coriander, and tangerine zest. Saturday February second marks 'First Saturday Firkin,' and this month will feature Flo IPA with a light addition of sweet orange peel. Friday Feb 8th Chilly Water Baltik Porter will return to the taps. We aged this batch on whiskey barrels to create a marriage of the dark lager with whiskey and American Oak. Blind Worm guitars is then taking these barrels and making custom patio tables, we will all enjoy come spring time. On Valentine's day we debut our Imperial Stout, Passed Stout. It's the first time we've brewed this one in over 2 years and we can't wait to have some to drink! This 11% ABV stout is brewed with milk chocolate, cacao nibbs, and whole Madagascar vanilla beans. Friday February 22nd we play host to the Rocky Mountain Micro Symposium and expect brewers from ~10 states to descend on Trinity for an evening of fun, food, and beer. Saturday February 23rd is Firkin Rendezvous, a fund raiser for the Colorado Brewer's guild. We will hand tap special and rare Firkin of Pappy Legba at the event! Sunday February 24th will mark one of the highest honors in my brewing career, as I get to Co-host the six course Wild Beer & Wild Game dinner with Peter Bouckaert, featuring a the preview of a special collaboration Berliner Wiesse we brewed for the event.
