Wow, what an October! We brewed up a number of labor intensive once a year harvest beers, and walked away from the Great American Beer Festival with yet another medal all in one month! TPS Report wins a Bronze medal in the American Bretta category at GABF 2012. This is quite an honor and a proud moment for Trinity, as this category is one of the more difficult and respected categories at the festival. It's the second medal for TPS Report (gold in 2009 in the experimental category). For the 2012 vintage we changed our process a little bit. The beer was brewed with lemon, lime, and tangerine zests; fermented with a wild yeast from Drei Fonteinen and a small amount of Lactobacillus; then aged on rose petals and French oak Chardonnay barrels for the first time. The resulting work of art has a large funky yeast character heavy with notes in barnyard and bitter leather, balanced by notable citrus, a light earthy sweetness, and a mellow acidity. I think this is the best vintage of of TPS Report we have brewed to date! There are a very limited number of 750ml bottles available for enjoying immediately or aging in your cellar. Come see us soon though as the bottles are selling fast !
We brewed enough harvest beer to carry us through the harvest season (hopefully) ! Stop on by the pub to get some tasty Farmhouse Walloon, Houdini Hopper Fresh Hop, or Emma's Pumpkin Saison. As the weather gets colder our beers will continue to get darker and stronger. Merle, Saison Nocturnum rolled out at 12.2% ABV this year. Brewed with Grains of Paradise, Hibiscus, Sassafras, Sarsaparilla, coriander, and toasted cumin this super Saison is easy to drink, almost too easy to drink (creeper style). We've got a dark and strong lager up our sleeve too! Chilly Water, Oatmeal Baltik Porter aged on Cauchalalate wood returns to faucets on Black Friday (Nov. 23rd) at noon! Rolling out at 8.5% ABV, this winter warmer is extra special for 2012. One of our regulars, Stuart Atkinson, loves this beer so much that we had him come in and help out as a guest brewer for the batch... look for the 2012 vintage of Chilly Water to have a little be of extra magic to it ;). Saturday, Nov. 3rd we tap our 'First Saturday Firkin' featuring our Flo IPA aged on experimental Motueka, Amarillo, Kent, and Willamette hops. Expect a balanced apricot, lemon, and lime citrus notes. Remember to continue fighting the good fight, only drink slightly tilted beers :) !
