From the Gem & Keystone press release:

Introducing The Gem and Keystone

Shawnee on Delaware, Pennsylvania---Presenting the finest local and regional ingredients, uniquely prepared to pair with selections from its exclusive onsite brewery, The Shawnee Inn and Golf Resort is scheduled to unveil a new dining experience, The Gem and Keystone, opening September 3, 2009.

Enhancing the resort's reputation as one of the top dining destinations in the area, The Gem and Keystone is destined to become not only one of the top restaurants in the Pocono Mountains, but throughout the Northeast. The Gem and Keystone will be the home of ShawneeCraft brewing, a special new feature of the historic resort. Many of the classic American pub items will be cooked with different styles of ShawneeCraft beers, while every selection will be created to complement different styles of beer.

"We are excited about infusing fresh ideas into an invigorated menu, " said General Manager Daniel Rothman, a longtime chef and one of the region's leaders in the implementation of "farmfresh" whol foods into dining. "We know our guests will enjoy every visit to The Gem and Keystone".

Formerly Sam Snead's Tavern, the revitalized restaurant will feature all-natural choice cuts of meats, including lamb from Jamison Farms, of Latrobe, PA--to be showcased in new menu items, such as the braised lamb shank with root vegetable and crisp gnocchi. Along with fresh locally raised trout, which thrives virtually right outside the door, seafood selections will be taken from the Smithsonian Sustainable Seafood List.

The restaurant will prepare produce from its own private garden, while fostering relationships with local farmers, artisan cheese-makers and others to present the highest form of quality seasonal cuisine.

Regulars will find many Sam Snead's favorites reprised on the new menu, including choice, juicy steaks, smoky tender ribs, our fabulous crab cakes and more. The Gem and Keystone will put its special touches on them, all designed to satisfy long-time guests and new visitors alike.

The setting will maintain its familiar golf theme, with more emphasis on Shawnee's own storied golf history. Guests will also enjoy the addition of period art, antique brewery pieces and local artists' work on the nature and scenery of the Delaware River and its surrounding area.

The motto of ShawneeCraft Brewing Company, "True to Nature, True to the Craft", is embodied in its perference for natural and local products, and is contributing to Shawnee's ongoing program to shrink its carbon footprint. This commitment to nature, craftsmanship, and authenticity is the core principle of ShawneeCraft. Under the direction of brewmaster Leo Bongiorno, ShawneeCraft Brewing Company makes artisanal, heirloom, whole-food beers right at the resort. Only the finest ingredients are used, sourced as locally and as organically as possible, with the lightest possible environmental impact, and with no artificial ingredients or stabilizers whatsoever. Current offerings include a variety of session ales and lagers, as well as barrel aged specialties - the list continues to grow.

The Gem and Keystone will open daily for lunch and dinner, with lunch starting at 11:30am and dinner at 4:00pm. The restaurant will continue to host private parties and group events as well. The new restaurant will open September 3, 2009.
