5 Rabbit & Central State Collaborate On Cascarudo

imageFrom Central State & 5 Rabbit:

Cascarudos 7.5% ABV - Brewed in collaboration with Central State Brewing, the ¨mostly brett¨ brewery from Indianapolis.

After independently experimenting with cascara as a central ingredient in our beers, and comparing notes at the yearly coffee and beer festival Uppers and Downers, we decided to join forces and brew one together. The result is this beautifully balanced kettle sour red brewed with a very healthy dose of cascara which adds layers of red fruit, leather and funk. Orange peel and ginger compliment the red malt profile and cascara, while brightening the beer as a whole. We finish the beer with some oak spirals during fermentation.

We also partnered with Gaslight Coffee Roasters, who helped us source the cascara from Las Lajas coffee farm in Costa Rica, an organic farm and micro mill known for being one of the first to process honeys and naturals in the region.

¨Cascara¨ means husk or peel in Spanish. It is the dried pulped skins of the coffee cherry. It is usually sun dried before packaged. Normally cascara is considered a by-product of the coffee making process, usually discarded as waste or used as compost.
¨Cascarudos¨ is Costa Rican for shameless
.

What happens when you take two adventurous breweries and combine their forces with an award-winning executive chef and his lights out staff? This dinner.

Seasonal ingredients flourish beside beers that highlight culinary experiences while also shining on their own.

This family style hangout will feature our recently brewed collaboration, as well as 2 other beers from each brewery. Stay tuned for more on that. Menu and Beers Below, including details about our collaboration!
