Bottle Release and On Draft: Friday, May 19th, 11am-10pm

Les Saisons, Dry-Hopped Rustic Saison Aged in French Oak Barrels | 6.8% ABV

Les Saisons means the seasons, and we designed the aromas and flavors of this beer to match the season that it is being released in. This year’s version (Spring) is dry-hopped with Nelson and Styrian Golding hops giving a floral and light fruit character matching flavors associated with Spring. This beer’s fruitiness is driven by the brettanomyces strain selected for this beer and has very gentle tartness from lactobacillus.

Liminal Spaces, Barrel Aged Biere De Garde | 9.5% ABV

Liminal Spaces is a collaboration beer brewed with Adroit Theory Brewing Co from Purceville, VA. We utilized a saccharomyces strain harvested in from honey suckle flowers in Purceville. We primary fermented the beer with this strain, then pitched Council’s house brettanomyces and lactobacillus cultures then transferred to the barrels that previously held Fun with Mangos. We left the mangoes in the barrel and aged the beer on them to provide a light fruity complexity to this beer.
